Courgette Curls

I’m always looking for interesting additions to a meal. The great thing about these skewers is that they go with anything. Whenever I serve these to guests, they disappear within seconds – always a tell tale sign! They’re also fun to make, which is always a bonus for the cook.

Ingredients

4 kebab skewers

4 large courgettes

100g plain breadcrumbs

50g grated Parmesan 

Pinch of salt

Pinch of garlic salt 

Pinch of pepper

Method

Preheat the oven to 180c.

Soak the wooden skewers in water for around 30 minutes.

Wash the courgettes and place each courgette onto a wet skewer. With a knife, start at one end of the courgette and rest your knife on the skewer slightly at a diagonal pointing into the courgette then slice while twisting the courgette to create a spiral. 

Keeping the courgettes on the skewers, pull apart – like an accordion – to expose the inside. 

In a bowl, mix together all the other ingredients except for the oil.

Place the courgettes on a baking tray, drizzle with oil and sprinkle with the breadcrumb mixture. Make sure the oil and breadcrumbs go between the slices. 

Bake for 30 minutes.
