This is a summer special, which always gets people excited. I love the combination of savoury and sweet and there’s something so Mediterranean about this particular combination. It can be a starter or a great side to any dish you choose to serve.
Salt and Pepper
Start by laying the rocket on a platter. Using a sharp knife, chop up the watermelon into chunks or strips and place them over the rocket. Use your fingers to crumble the feta over the top. Sprinkle the sunflower seeds, oregano and then drizzle the dressing for an extra special finish.
