Pick & Mix Burgers

This is a great family favourite. Everyone always loves choosing their fillings and making their own burger. It gets people talking and makes for a really fun meal.

Ingredients

  • 1kg good-quality beef mince
  • 1 medium onion, peeled & finely chopped
  • Handful of parsley, finely chopped
  • 1 medium egg
  • 2 tbsp olive oil
  • salt & black pepper

Quick pickled cucumbers

  • 1 cucumber
  • 3 tbsp white wine vinegar
  • 1 tbsp caster sugar

To serve

  • 2 beef tomatoes
  • sliced 1 pineapple, peeled
  • sliced avocado
  • lettuce
  • 8 burger buns

Method

First prepare the cucumbers. Using the prongs of a fork, scrape down the length of the cucumber to remove stripes of peel. Finely slice the cucumber. Mix the vinegar with the sugar and a pinch of salt in a bowl, then add the cucumber slices and mix everything together with your hands. All the slices should be well covered with the vinegar mixture. Leave for 30 minutes before serving.

For the burgers, put the mince in a bowl, add the onion, parsley, egg and a good seasoning of salt and pepper and mix well. Shape the mixture into 8 burgers and rub them all over in oil.

Heat a large non-stick frying pan over a high heat and cook the burgers for 3–4 minutes on each side or until just done. (These are also good cooked on a barbecue.)

Put the pickled cucumbers, onion rings, tomato, pineapple, avocado and lettuce on the table with the buns and let everyone pick their fillings and build their burger.
