Baby Gem Summer Salad Recipe

The freshness of all these ingredients will remind you of everything the summer months bring and this summer salad is an easy addition to any bbq or picnic. You can whip this up in a matter of moments and will sit proudly on your tabletop.

Baby Gem Summer Salad

Ingredients

  • 4 baby gem lettuce
  • 1 Hand full whole hazelnuts
  • 4 Figs
  • 125 g Pomegranate seeds
  • 1 Whole pomegranate for decoration
  • 200 g Yellow tomatoes
  • 2 Avocados
  • 200 g Feta optional
  • 1 Lemon
  • 2 pinches Oregano

Dressing

  • 1/2 cup Sunflower oil
  • 1/2 Lemon squeezed
  • 3 TBSP Red wine vinegar
  • 3 TBSP Sugar
  • Pinch Salt and pepper
  • Drizzle of honey

Instructions

  1. cut the baby gem in quarters length ways and wash. Leave to dry off and if it needs a little help pat it down with a paper towel. 

    Once dry enough break it up into a mixture of single leaves or a few together on your serving dish to create a luscious lettuce layer. 

    Cut tomatoes in halves and scatter around on top of the lettuce, together with sliced figs. 

    Sprinkle the pomegranate seeds as well as the whole hazelnuts. The whole pomegranate cut in half or quarters and use as decoration on the edge of the salad. 

    Last but not least crumble the feta cheese on top (this can be optional). Drizzle the dressing and sprinkle some oregano to finish it off. It's really nice to leave a little bowl of the dressing on the side as well as another little bowl filled with oregano.
