This is a Lebanese classic, which I absolutely love. Middle Eastern cuisine always has a kick to it, however healthy or light the dish. This can be served as a light main or a side salad and is wonderfully refreshing.

Tabouleh Salad

Simple to make and refreshing to taste, the longer you leave the olive oil and lemon to be soaked up by the bulgar wheat the more delicious it becomes.

Jewelled Carrot & Chickpea Salad

This is an innovative and delicious salad, which is great for brightening up your table. It’s quite a substantial side dish, so the good thing is you don’t have to make much else. You can decorate it as much or as little as you want – I often get carried away!

Light Za'atar Honey Salmon

Za’atar is such an interesting spice mix that seems to work for a variety of different dishes and each time it seems to taste that little bit different. Its a classic spice mix for Middle eastern flavour.

Chicken Sosaties Kebabs

Sosaties is a traditional South African dish, often made with lamb. Recipes vary but usually include apricots and red peppers as well as the meat. I felt this would work well because of the spices used in this recipe.
