How to Build & Decorate Your Wedding Cake

A homemade wedding cake is a fun and rewarding way to get involved in the preparations for a wedding, whether it’s yours or that of a loved one. Here is the recipe for a delicious wedding cake I made for our event with Ted Baker.

Before You Start
This cake needs to be baked at least the day before the event to allow the sponge enough time to cool. If you put the icing on the cake while it is hot, it will just melt. Before you start, make sure you have a two round cake tins of different sizes, both with a solid base. You will also need a cake board that is at least 5cm wider than the size of the cake.

Vanilla Sponge Wedding Cake Recipe

This is a two-layered cake, so you will need to start off by making two cakes of different sizes. I made the first cake with a circumference of 23cm and the second cake with a circumference of 15cm. For this particular one, I doubled up to give it extra height. If you want to do this as well, you will need to bake two of the larger cakes and two of the smaller ones.

Once the cakes have cooled down completely, turn them out of their tins. Place one of the larger cakes on a board and slice off the top so that you are left with a flat surface. This means that when you place the second layer on top it will sit nicely. Use a spatula or a knife to spread the icing over the cake you’ve just sliced. Then place the second larger cake on top of it. Ice it all as if it is one very large cake. You can use a ruler (or something straight-edged) scrape around the edges and over the top to smooth it out. Place in the fridge for a few minutes to harden. Then apply a second layer of icing.

Repeat the same method with the two smaller cakes, but leave them separate from the larger ones for now.

Once both layers of cake have been iced, you can put them together. I recommend using plastic lollipop sticks to keep them sturdy. Place the sticks vertically into the first cake layer. Carefully place the second layer on top of the first making sure it’s right in the centre. The lollipop sticks particularly necessary if you transporting the cake, as they will keep everything in place.

Then it’s time to decorate. You will need about four roses and six small flower heads of your choice. You’ll also need a cake topper, which will be the first thing to go on the cake, right in the middle of the top layer. Take the flowers and cut each of them down, leaving about 2cm of stem. Dot the flowers around the cake, using the stems to support them.

And there you have your very own homemade wedding cake.
